Creamy Parmesan and Leek Twice-Baked Potatoes

In this recipe, I've created a much creamier, parm and leek version of the classic twice-baked potato. To create a super creamy texture, I mashed the potatoes with a parmesan sauce. And to add some contrast, I added a crispy bread crumb topping.

Squash, Apple and Cheddar Melts

A lot of people swear by adding cheddar cheese to apple pie, apple crisp and other apple desserts. To this day, I've never added cheese to my apple desserts. But with this sandwich, I'm inching closer to that *interesting* combo.

The Best Summer Corn Chowder

I loaded the soup with onions, celery, carrots, garlic, potatoes, corn zucchini, tomatoes AND a jalapeño to make the most of summer produce. For the methods, I made the soup extra creamy by blending half of it (before adding in the corn, of course - I wanted to let the kernels shine) and adding in a can of coconut milk. In this recipe, I decided to pair my carrots with lemon juice and everything bagel seasoning.

Crispy Gnocchi with Brussels Sprouts and Lemon

I know I'm late to the gnocchi party, but I’ve never been a huge gnocchi fan. That is — I wasn’t a huge gnocchi fan until I made this recipe. My previous homemade attempts had resulted in mushy, clumpy or boring dishes. But this New York Times recipe from Ali Slagle is different: it's crispy, fresh, flavorful and celebrates Brussels sprouts season.
