Spring is such an exciting time for seasonal eaters. After months of little-to-no locally available harvests, local herbs, fruits, veggies and foraged foods are finally coming onto the scene. From asparagus to strawberries, I have spring recipes to incorporate all your farmers’ market finds this season!

 

Spring Breakfast Recipes

Carrots are one of the first signs of spring and I absolutely adore them. In these Spiced Carrot and Orange Muffins, maple syrup and spices liven up things up, while whole wheat flour keeps things hearty and filling. These muffins are perfect for breakfast or an afternoon snack!

If you're looking for a springy spread for your toast or bagel, look no further than my Vegan Strawberry and Rhubarb Cashew Cream! It's similar to cream cheese, but completely vegan and super flavorful. Just soak the cashews and blend them with strawberries, rhubarb and a touch of sugar.

These Honey Rhubarb Muffins are tender, flavorful and moist. They come together in about 30 minutes and make the most of that gorgeous farmers' market rhubarb!

This Strawberry Green Smoothie is refreshing, healthy and gorgeous! It blends in under five minutes and makes for a nutritious and filling breakfast. Although I wrote the recipe with strawberries in mind, feel free to toss in whichever frozen fruits you have on hand!

One of my favorite lunches is back in season! This Chickpea, Beet and Veggie Sandwich features beet pesto and makes the most of spring produce like carrots, microgreens and radishes. It's crunchy, nutritious and super filling!
